Well, notice that you use:

,----
| @documentencoding utf-8
`----

but the Texinfo manual says to use:

,----
| @documentencoding UTF-8
`----

So, I tried changing it to what the manual said and, sure enough, the
warning has gone away. More importantly, the accented characters
actually seem to work. (Unfortunately, the title page is messed up: it
seems that texinfo.tex cannot handle such a long title.)
